Things to do with blueberries

Last week I bought the blueberries from the farmer’s market and then had to find uses for all of the great fresh fruit. I had thought about making a peach and raspberry pie, then I remembered that I don’t really like baked or warm peaches. So, the pie was out.

It was easier to find things to do with the blueberries.
I got this whole wheat pancake recipe from

2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs, well beaten
2 cups milk
2 tablespoons vegetable oil

I just added about 3/4 cup of blueberries to the mix. And I used plain soy milk. My pictures of food don’t come out really well (I have much to learn there), but they were great.

Then came the scones. I have a real love for warm and delicious scones and I think this scone mix is pretty darn good. The Sticky Fingers scone mixes and curds are really great, and the scone mix is just add water. Love it. I added some blueberries and lemon zest to the original mix and sprinkled some raw sugar on top before baking. Sadly, the store was out of the Sticky Fingers lemon curd and I had to get some replacement curd which was not as delicious. Still did the trick.

  1. They look great!! So sorry to hear about the not-up-to-par lemon curd. Jordan picked the Tea Room for lunch today and I thought of you as I enjoyed our favorite scones and curd – yum!! She REALLY enjoyed her lunch and as already asked to go back again. I so wish you could be here to join us.

  2. I found a recipe for sour cream pancakes – they are heaven. Obviously thicker and heavier but really delicious! And I love putting blueberries in them.Oh yeah, sorry, I should have come left you a note saying I had tagged you huh? Can you tell I'm still getting the hang of this?
